In La Rioja, when autumn begins to unfold its mantle of reds, golds, and browns, the Ramón Bilbao vineyards transform into a living canvas that celebrates the end of the harvest. This fleeting spectacle is the essence of “Colors of Rioja”, an enogastronomic and landscape-driven experience that invites you to pause time and toast to the beauty of the moment. A journey through vines, barrels, and open flames that promises to awaken all the senses and leave no one indifferent.

At the end of October, the Los Aguilones estate—located on the banks of the Ebro River, near the town of Haro in Rioja Alta—becomes the setting for this brief encounter that visitors can enjoy for one day only. Available exclusively on October 25th, the experience offers guests the opportunity to wander through the Ramón Bilbao vineyards at sunset, when the light intensifies the colors and the landscape becomes pure emotion. The walk concludes with a picnic among the vines, where the first toast celebrates the recently completed harvest and anticipates the experience awaiting at the winery. Upon returning, guests are guided through different rooms of Ramón Bilbao, some of them never before opened to the public, where they will discover the secrets behind the winemaking process and taste wines directly from the barrels—an intimate dialogue with their origin. Recently recognized with the prestigious Best Of Wine Tourism award and ranked among the world’s most admired wineries, Ramón Bilbao offers a sensory, immersive experience that allows visitors to enjoy unforgettable moments.

A Michelin-Star Dinner Honoring the Landscape

The experience continues in the winery’s restaurant, with an exclusive dinner designed by chef Germán Carrizo of Fierro (Valencia, 1 Michelin Star), who recently celebrated the restaurant’s tenth anniversary. He reinterprets the “Colors of Rioja” through fire, local ingredients, and seasonal produce.

The menu—conceived as a tribute to the landscape and the chromatic nuances of the Rioja autumn—pairs perfectly with Ramón Bilbao wines. It begins with three palate-awakening snacks served with Early Harvest Verdejo, a fresh, vibrant wine with lower alcohol content thanks to a 100% early-harvest grape selection. Límite Norte, the first white wine ever crafted by the winery, and the Ramón Bilbao rosé—which this year has been relaunched with an elegant and more sophisticated look—also accompany the opening bites. Fire takes center stage in the cold starter, warm starter, and main course, paired respectively with Lalomba Finca Lalinde, an age-worthy rosé that marked the beginning of the winery’s single-vineyard project; Límite Sur, a wine sourced from a little-known spot in the Sierra de Yerga with clear Mediterranean influence; and Mirto, the winery’s most iconic wine and precursor of today’s village wines of Rioja.

The grand finale comes in the form of a dessert celebrating the sweetness of autumn: a quince sponge cake with grilled fig and whipped sweet-wine cream, served with caramelized walnuts and the unmistakable character of Gran Reserva Centenario—the winery’s classic jewel and a pure expression of Rioja’s finest elegance and tradition. To conclude, a petit four encapsulating the region’s essence: a pear tartlet roasted with saffron and red-wine caramel, also paired with Gran Reserva Centenario.
